Chocolate Banana Peanut Butter Cuppies
Summer months are always packed with cook outs, barbecues, picnics and plenty of other parties that can be disastrous for those trying to stick to a healthy eating regimen. That being said, my schedule has recently been saturated with events involving plenty of calorie-laden temptations. From beer and baseball games to birthday festivities, girls night out, and concerts, it's been quite the challenge making wise food choices while out and about.
Work has been no exception to this. From grand openings, anniversary parties, and birthdays, there is always something to celebrate in marketing. And no celebration would be complete without plenty of good food! Pizza, stromboli, Chocolate chip cookies, ice cream cake, vanilla cake, chocolate cake; the list goes on. Avoiding office temptation is the hardest challenge in my book. (And no, we don't just eat everyday, we actually do work too!) This week is not looking to good for the scale either. It's potluck time at work! With a picnic theme in mind, there will be crock-pots full of diet disasters. I'm signed up to make pierogies and of course, a dessert.
Chocolate and Peanut Butter were the premier flavors sticking out in my mind as I was thinking of what to make. Also a necessity? Bite sized! I remembered a jar of banana peanut butter I had in the pantry and decided it was the perfect time to break it open. Sitting on top of a chocolate stout mini cupcake, the banana peanut butter frosting is so unique, it will leave you guessing as to which flavor is bursting through with each bite. Drizzled with a drop of hot fudge and crowned with a Reece's Pieces, these treats may be small, but are packed full of flavor. It's the perfect treat for eating and mingling.
Chocolate Banana Peanut Butter Mini Cupcakes
Adapted from my Guinness Cupcakes
For the Cupcakes
3/4 cup cocoa powder
2 cups sugar
2 cups flour
1 tsp baking soda
1/4 tsp salt
1 cup stout beer
1 stick butter
1 tbsp vanilla extract
3/4 cup heavy cream (or sour cream)
Sift together Cocoa powder, sugar, flour, baking soda, and salt
In a medium mixing bowl, combine beer, melted butter and vanilla
Add eggs, one at a time. Mix in sour cream until smooth
Slowly add dry ingredients to the wet ingredients
Beat until well combined
Divide batter among cupcake liners
Bake at 350* for 12-14 minutes
For the Frosting
2/3 cup Banana Peanut Butter (Trader Joe's)
1 stick butter, softened
3/4 cup confectioner's sugar
Combine butter and peanut butter in the bowl of an electric mixer
Slowly add the confectioner's sugar
Pipe frosting onto cooled cupcakes
