Cupcakes Cupcakes Cupcakes!


I can honestly say that I remember almost every birthday party I had while growing up. As a Moonchild, I'm lucky enough to celebrate my birthday in the heat of summer. This meant plenty of pool parties and backyard cookouts. One of my favorite traditions was the great 'Penny Hunt'. My parents would wrap over 100 pennies in aluminum foil, scatter them in the grass, then all the kids would hunt for them. When you're under the age of ten, this seemed like the greatest game of all time. Now, looking back, I realize we were damn fools! Call me crazy, but for some reason, looking for 100 pennies across 1.5 acres of lawn, while burning under the blazing summer sun, doesn't seem so entertaining.

These days, kids birthday parties have ballooned into huge extravaganzas. There's no need for penny hunting when there are things like laser tag, gymnastics parties, glow bowling, and even pony rides! This past weekend, my cousin's son celebrated his 4th birthday. With a Backyard Barnyard theme, the party featured a real petting zoo that came to the house! Miniature horses, goats, bunnies, and a goose. The joy on the kids faces was priceless, as they all got a ride on the pony.


Of course, no party is complete without cupcakes....70 of them, to be exact! With three different flavors to choose from, I tried to keep with the barnyard theme by incorporating bandana cupcake liners and farm themed decorations. Cupcake option #1 featured my white cake recipe from last week's post and 'pig pink' buttercream. Option #2 was a cookies and creme cake base with classic buttercream, speckled with Oreos to look like cow spots. Finally, the third cupcake option was a double chocolate mint chip cake base with 'grassy green' buttercream. I've been cheating a lot lately and using boxed mixes as my bases, but with a few additions, you can really dress them up and make them extra special. These three cupcakes turned out so delicious, it was hard to pick a favorite!







Double Chocolate Mint Chip Cupcakes

Ingredients:
1 SuperMoist Chocolate Fudge cake mix
1tsp Mint extract
1 tblsp Bailey's Irish Cream
24 Thin Mint cookies
1/2 cup mini chocolate chips

Directions:
-Preheat oven to 350*, and line pan with 24 cupcake liners
-Place a Thin Mint cookie on the bottom of each cupcake liner
-Using an electric mixer, prepare the cake mix as directed on the back of the box
-Add the mint extract and Bailey's Cream
-Fold in the mini chocolate chips
-Divide batter among cupcake liners and bake for 15-18 minutes or until done

Cookies & Creme Cupcakes

Ingredients:
-1 SuperMoist Butter Yellow cake mix
-1 1/4 cup water
-1/3 cup vegetable oil
-3 eggs
-1 cup crushed Oreo cookies-
-24 Oreos halved

Directions:
-Preheat oven to 350*, and line pan with 24 cupcake liners
-Place an Oreo cookie on the bottom of each cupcake liner
-Using an electric mixer, prepare the cake mix as directed on the back of the box
-Fold in the crushed Oreo cookies
-Divide batter among cupcake liners and bake for 15-18 minutes or until done
