Ninja, I blend together 5 strawberries, a scoop of chocolate protein powder and a cup of coconut milk. Starting my day the healthy way gives me the energy and nutrients I need to make it through my day without getting that mid morning fatigue. For lunch, I throw together a spinach salad with strawberries, grilled chicken and a light lemon poppy vinaigrette dressing. Eating that many strawberries, means a quart lasts me no longer that two days. Fresh from the grocery store, I just brought home 4 pounds of strawberries! It's only appropriate that this week's recipe would feature this popular red fruit.

Happy Monday! I hope everyone had a wonderful and relaxing weekend...I know I did!
This past weekend I celebrated my wonderful father's 55th birthday! That's right, for 55 years he has been putting up with my nonsense...Thanks Dad! In my family, birthdays celebrations seem to last over the course of a few days. First, we celebrate with just the immediate family on the day of the actual birthday. This usually involves dinner out at a nice restaurant. Second, comes the celebration with friends. This is usually a night out on the town, with the drinks overflowing, music blasting and the dance floor hopping. Finally, another family gathering with all the cousins, usually a Sunday afternoon get-together with good food and delicious cake.
